JUST DESSERTS
For executive chef Matt Balmer, the rule of thumb
when it comes to a great meal is that "everything has to
be just as good as the last thing you had, or better . . . That
means that the entree has to be at least as good as the appetizer,
and the dessert has to be best of all."
To be sure that the desserts at Everyday People
Café rise to the occasion, Balmer, along with head chef Curt
Bass, has created a dessert menu to die for. Items on the menu
change every few days, but usually include at least one "homestyle"
and one chocolate dessert, such as volcano cake or rich chocolate
torte. In the fall, the menu might feature something heartier
like bread pudding, and in the summer, fresh fruit from local
farmers is incorporated into recipes whenever possible.
One constant on the menu, and the café's
signature dessert, is a heavenly crème brûlée Napoleon,
with puffed pastries and whipped cream in a sweet pool of raspberry
coulis. You'll have to save room fit, though. At four layers,
it's a dessert built for two.
